@EddieK. Try Quorn pieces to substitute for anything you'd use tofurkey in. They are way tastier on their own, and take up any flavor you add. The consistency is nicer too. I use them for curries and fajitas, also.
I think you can only get them at Whole Foods though, due to a veggie foods conspiracy likely started by their competitors.

@Tiffany Tofurkey is SOOO much better when you cut it into slices, marinate it overnight, and then bake it the following day. The Tofurkey absorbs a lot of it and it ends up having a ham-like texture to it.

I was introduced to Field Roast this year and now I want to eat it every day.

I spent T-Day with a host that doesn't cook so we had T-Day in a box. For the other days I got frozen Amy's dinners. I was super psyched to try the veggie loaf but was disappointed. I had the same experience with a veggie burger at Bellagio. It was not mushy, but mushily put together yet it kept it's shape. I don't know how to describe it.
This discourages me from trying to successfully make my own veggie loaf.

I think Tofurkey is disgusting. I'd rather just make a good white gravy with some sauteed GimmeLean sausage and pour it over my potatoes

There is a great vegan restaurant in NYC called Candle 79 http://www.candlecafe.com/# I ate at for a few years on T-Day when I was with a vegan. It was incredible.
