My mom’s cornbread. She is a much better cook now than when I was a kid though. My dad by the way can’t cook for shit he’ll eat malt-o-meal out of the box with his hands.

My mom makes the best tofu lasagna (so good that no one knows that it’s meat free). Though my dad is the king of smoking ribs, I miss his tuna noodle casserole (that isn’t the same as it used to be as he is now losing his taste buds and over-salts it everytime) and his amazing cream of wheat.
It’s funny what you miss. I know how to make the said cream of wheat, but don’t even have cream of wheat in my kitchen.

@ tiff – you can come on over – I have cream of wheat! (But only if you make it lumpy.)
I miss my mom’s quesadillas – she put a lot of delicious things in them. I think I might miss the way she makes Cream of Wheat as well.

I miss thE following which was a typical “mom meal”:
salad co nsisting of some part of my moms garden also avocados.
brown rice.
Tofu onions and brocolli cooked with garlic, ginger, soy sauce and nutritional yeast.
