Daiya Cheese

DaiyaEating a vegan diet can provide many challenges, especially when you love food. After giving up meat at the age of 17, people always ask me if I miss eating meat. The answer is easily no. What I do miss is dairy. I went vegan about 7 years ago. I was an overweight vegetarian at the time living off of cheese fries and mozzarella sticks. The transition was really hard, but the instant weight loss was excellent motivation. I still found myself craving a cheese pizza, with yummy gooey cheese. I often found vegan cheese disappointing. It varied from rubbery to chalky, and vegan pizza was usually better off without any vegan cheese at all. Suddenly within the last few months, a new vegan cheese has appeared. I first heard about it when Cruzers pizza started using it in their vegan pizza. One try and I was sold. Not only was the texture perfectly melted, but it tasted really good. Friends who eat dairy have said it’s pretty good, but those of us who have been cheese deprived for years will really love it. Restaurants all over the country are implementing Daiya cheese into their menu’s, and markets like Whole Foods and Mother’s in Orange County where I live are selling it by the pound. The price is reasonable, and it has been so great using it in recipes at home. I’ve used the mozzarella on homemade pizza and quesadillas, but I am in love with the cheddar. So far we have melted it down in a super yummy cheesy sauce to use on mac and cheese, nachos, and baked potatoes. Daiya cheese gets [rating:5.0].     That Mac & Cheese was so good. Maybe I’ll have to try it on more things now. I love a good baked potato with cheese or chili with cheese. So many options.

    Though we’ve broken down and have started eating real cheese again- I’m always interested in good vegan cheeses!
